In bowl, combine chicken and seasoning. Form the chicken into 3 equal patties about 5 inches in diameter. Make indent in center to prevent patty from puffing up.
In small bowl, stir together mayo, blue cheese and 1 tbsp of hot sauce.
Cook patties in well-oiled, heavy skillet over medium-high heat for 5 minutes on each side until completely cooked inside. Remove from skillet.
Place buns in skillet and heat, cut sides down, for about 1 minute. Stack bun with lettuce, followed by chicken patty, blue cheese mayo and an onion slice.
